Apple of the Week!
Cortland
Developed by the New York State Agricultural Experiment Station in 1898, this sharp and refreshing apple is excellent for cooking or just plain eating. Even though Cortland’s are a cross between a Ben Davis and McIntosh, it inherits most of its characteristics from the Mac including its incredible flavor. Its main difference is its tendency to be a little more firm makes it a perfect pie apple or apple crisp.

Our Festivals offer a break from the tangle of everyday living with pure and simple, honest-to-goodness family fun. They’re a time when moms and dads, grandparents and grandchildren, sisters and brothers, and kids of all ages can reconnect with each other and with the land to make memories that last a lifetime. Our Fall Festivals launch on the first weekend in September and run from 11:00am to 5:00pm, both Saturday and Sunday, every weekend, through the end of October. Our Favorite Recipes!
Maple-Roasted Delicata Squash with Red Onion
Ingredients
- 3 medium Delicata squash (about 3 pounds), halved lengthwise, seeded, and cut into 1/4-inch thick slices
- 2 medium red onions, halved lengthwise and cut into 1/2-inch rings
- 5 garlic cloves, peeled and smashed
- 4 fresh thyme sprigs
- 1/2 teaspoon red-pepper flakes
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons maple syrup
- Kosher salt
- freshly ground black pepper
Arrange the racks in the upper and lower rungs in the oven and preheat the oven to 425°F degrees. Place the squash, red onion, garlic, thyme, and red pepper flakes in a large bowl. Drizzle with olive oil and maple syrup, and sprinkle generously with salt and pepper; toss to coat.
Spread vegetables evenly onto two large, rimmed baking sheets. Bake the squash on the upper and lower racks of the oven, tossing, rotating, and switching the pan positions half way through cooking, until tender and browned, 25 to 30 minutes. Taste and season again with more salt and pepper, if desired.
Ingredients
- 6 golden delicious apples, peeled and chopped (other varieties can be used, can also be sliced)
- 2 Tbsp granulated sugar
- 1 3/4 tsp ground cinnamon, divided
- 1 1/2 tsp lemon juice
- 1 cup light brown sugar
- 3/4 cup old fashioned oats
- 3/4 cup all-purpose flour
- 1/2 cup cold unsalted butter, diced into small cubes
- pinch of kosher salt
Preheat oven to 350 F degrees. Butter an 8×8 baking dish, or spray with non-stick cooking spray.
Set aside.In a mixing bowl, add chopped apples, granulated sugar, 3/4 tsp of the cinnamon and lemon juice. Stir to combine, then transfer to prepared baking dish.
In a separate mixing bowl, add topping ingredients (brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter). Use a pastry cutter to cut the butter into the oat mixture, using a slight downward twisting motion, until mixture resembled pea-sized crumbs. Alternatively, you can use two forks or even your hands to cut butter into the mixture.
