Apple of the Week!
Hampshire
This apple is a chance seedling discovered by Erick Leadbeater in 1978 on Gould Hill Farm in Contoocook, New Hampshire. It was found in a block of trees containing several different varieties including McIntosh, Cortland, and Red Delicious. However, it does resemble a Mac being more tart than sweet and a rich aroma. Hampshire’s are an excellent all around apple from baking to just plain snacking.

2019 marks the 45th year running that Applecrest has invited our community to celebrate and share in the harvest. Our Festivals offer a break from the tangle of everyday living with pure and simple, honest-to-goodness family fun. They’re a time when moms and dads, grandparents and grandchildren, sisters and brothers, and kids of all ages can reconnect with each other and with the land to make memories that last a lifetime. Our Fall Festivals launch on the first weekend in September and run from 11:00am to 5:00pm, both Saturday and Sunday, every weekend, through the end of October. Our Favorite Recipes!
(Leeks can be substituted with scallions and onions!)
INGREDIENTS
- 4 medium leeks, dark green stems removed
- 1/2 large white onion, chopped
- 2 medium russet potatoes, peeled and cut into cubes
- 1 tablespoon flour, use AP gluten free flour for GF
- 1 tbsp butter
- 4 cups chicken stock, use vegetable broth for vegetarians
- 1/2 cup 2% milk
- salt and fresh pepper
Wash leeks very carefully to remove all grit. I usually cut them horizontally and separate the rings to make sure no dirt remains. Coarsely chop them when washed.
Ingredients
- 1 1/4 lbs ripe tomatoes
- 1 (14.5 oz) can petite diced tomatoes*
- 2 green onions, ends trimmed, chopped into thirds
- 1/3 cup chopped red onion (about 1/4 of a medium)
- 1 jalapeno pepper, seeded and roughly chopped
- 1/3 cup fresh cilantro (about a handful)
- 1 large clove garlic, roughly chopped
- 2 Tbsp fresh lime juice
- 1/2 tsp chili powder
- 1/4 tsp ground cumin
- 1/2 tsp granulated sugar
- Salt and pepper to taste
Combine all ingredients in a food processor and pulse in 1 second bursts until all ingredients are finely chopped.
